Recipe for fried tomatoes, Domatokeftedes

This is a recipe of Greek origin. Simply rich encourages you to do and see.


Ingredients:


1 Kg of very ripe tomatoes
2 onions
1 bunch of parsley
1 teaspoon of dried oregano
Salt and pepper
1 beaten egg
1 cup chickpea flour
4-6 tablespoons of extra virgin olive oil


Preparation:


Chop the tomatoes and onions into very small pieces, chop parsley very small, then put them in a large bowl, add the oregano, salt, pepper and egg mixture. Mix well.
In a frying pan slightly roasted chickpeas flour and then adds of little previous preparation. With the help of a wooden spoon mix until you get a light consistency but to keep the ingredients together. Test and fix with a little salt and pepper if necessary.
Again heat the frying pan put something of olive oil over low heat, takes four portions of the size of a small hamburger mixture and put them in oil not very hot. Flatten them slightly with a spoon, cover cooking for 2 minutes and then turns back and cooking for another two minutes. Care that they do not burn. Make the rest of the preparation.
The amount of flour can vary dependent on the amount of fluid that loose vegetables.
